HEALTHY ELVIS (ie Peanut Butter, Bacon & Banana! 😱) PANCAKES // I woke up this morning craving what was apparently Elvis’s favorite flavor combo, a mix of PB, banana, and bacon that he’d have on a sandwich pretty much every day. It might sound weird at first but somehow it totally WORKS—the nutty, toasty PB and the sweet banana with the salty bacon...(if you’re vegetarian, just leave the bacon out, it’s still amazing!)⁣

To make a recipe like this healthier, I just swapped every individual ingredient for its best self. So the bread became my favorite simplemills grain free pancake mix (I’ve honestly stopped even trying to figure out a good pancake recipe because the mix works so well, I just keep it in my pantry), the bacon was organic from applegate, and the PB was my favorite traderjoes organic version, which only has one ingredient—peanuts. ⁣

To make these, I used 1.5 cups of the mix with avocado oil and water, and mixed the peanut butter right into the batter. I heated avocado oil in a large skillet, added a spoonful of pancake batter, then pressed 3 pieces of sliced banana right into half-cooked pancake. Sprinkle on some crumbled bacon, THEN flip the pancake and let cook until golden on the other side. This way, the banana caramelizes, and you get essentially brûléed banana in every bite (which, needless to say, is SO good!). Top with a drizzle of PB, any extra bacon, and maple syrup if desired. Enjoy!!

🙈My 2 year old was facing extreme side effects… she was malnourished, below the 0 percentile and labeled as ‘Failure to Thrive’ in her medical charts because of her lack of nutrition in her body (which believe me, I was making sure she was consuming good wholesome foods she just wasn't benefitting from them) she also experienced skin discoloration and she even lost a good portion of the hair on her head.

🤷🏼‍♀️Why? Because she has #celiacdisease and as you see here… #gluten is self destructing for her little body, just as it is for YOU!
💁🏼‍♀️I didn't fully see it at the time but looking back at her now... I can visually notice the side effects of her small body attacking itself!

☝🏼Notice the picture above- her eyes, her coloring, belly, and this was before she lost literally chunks of hair off of her head!

👀Look at her now... to say we are proud to be #glutenfree, that would be an understatement... we are so happy to know how to keep our bodies happy and healthy!

CHOCOLATE OVERNIGHT OATS WITH FROZEN BERRIES & PISTACHIOS 🍓🍫⁣⁣

I eat every ~3 hours. That's when my body usually asks for energy (depends on my activity level and what I had before that they), and if I don't give it to it, I get HANGRY. When that happens, no matter what I do or where I am, I stop everything and eat something (That's why I'm carrying bananas around).⁣⁣

My husband is the complete opposite - he's working long hours, and when he's focused or busy, he simply forgets to eat. Sometimes it gets to the point that he comes home at night, and when I ask him what he had to eat today, he strains his memory only to recall the morning toast before leaving to NYU. The thing is - he doesn't even care! But I do.⁣⁣

Since I'm not with him at work to make sure he's eating, I came up with a creative solution that works perfectly for both of us - I make him big breakfast bowls that will keep him going for at least a few hours. That why I make sure he's well-nourished and that I get to practice my daily art therapy :)⁣⁣

Have you ever made Irish soda bread? 🍀⁠

If you have no idea what I'm going on about... Soda bread is a quick bread that uses baking soda as the leveraging agent of traditional yeast. The lactic acid in the buttermilk mixed with the baking soda to make little bubbles that make the bread fluffy ☁️⁠

My Gluten-free Irish Soda Bread is my faaaaave!! It's fluffy, moist, and perfect for toasting up with melty salted butter. 🤤 If you've ever wanted to try out homemade bread but been a little nervous – this is the PERFECT recipe to try! Easy, no yeast involved, and super delish!⁠

Here's how to do it (SAVE THIS POST for later! 👇🏼):⁠

You'll need:⁠
2 cups blanched almond flour⁠
1/2 cup tapioca flour⁠
2 tablespoons monk fruit sweetener⁠
1 teaspoon baking soda⁠
1 teaspoon baking powder⁠
1/2 teaspoon sea salt⁠
1/2 cup buttermilk (1/2 tablespoons lemon juice or white vinegar + 1/2 cup whole milk), room temperature⁠

1. Preheat oven to 400F.⁠
2. Affix the c-dough hook attachment to the mixer.⁠
3. Place the almond flour, tapioca flour, monk fruit sweetener, baking soda, baking powder, and sea salt in the bowl of a standing mixer.⁠
4. Turn the mixer on and slowly pour the buttermilk into the bowl.⁠
5. Once the dough comes together, transfer to a baking sheet lined with parchment paper. Use your hands to pat and smooth the dough into a ball. Sprinkle the ball with additional tapioca flour.⁠
6. Use a sharp knife to cut a small “x” into the top of the ball.⁠
7. Bake in the oven for 35-40 minutes until it sounds hard when you knock on it.⁠
8. Allow the bread to cool for about 30 minutes before you slice into it with a bread knife.⁠
