4 tbsp parmesan, grated
1/2 cup olive oil
cracked black pepper to taste
MAYONNAISE
Beat together, season
2 egg yolks
1/2 tsp cayenne pepper
1/2 tsp dry mustard
1/2 tsp salt
3/4 tsp sugar
Add, beat until thick
3/4 cup light olive oil
2 tablespoons white vinegar
1 tbsp lemon juice

TARTARE SAUCE
Combine, season
1/4 cup mayonnaise
1/4 cup sour cream
1 tsp vinegar
1/2 gherkin, chopped
1 tsp capers, chopped
2 drops tabasco sauce
QUICK WHITE SAUCE
Combine
1 tbsp butter, melted
1 tbsp plain flour
Add , microwave
60 – 90 secs, season
1 cup milk
FRESH TOMATO SAUCE
Fry 3 mins
1 tbsp butter
1 onion, chopped
2 cloves garlic, crushed
Add simmer, 15 mins,
season
4 tomatoes, diced
1/4 cup basil, chopped
1/2 tsp sugar
QUICK HOLLANDAISE
SAUCE
Microwave 25 secs (med)
1/2 cup butter
Add, simmer 15 mins,
season
2 egg yolks, beaten

4 tomatoes, diced

APPLE SAUCE
Microwave 3 mins (med)
1 apple, peeled, sliced
1 lemon, zest of
1 tsp water
2 cloves
Remove clove,

MINT SAUCE
Combine
1 tbsp mint leaves, chopped
1 tsp sugar
Add, stir until sugar
dissolves
1 tbsp boiling water
1 tbsp vinegar
BROWN GRAVY
Combine and stir
fat in roasting dish
